Easy Crockpot Beef Schwarma
"I know this isn't traditional by any means; but, it is easy, quick, and really delicious. It takes just minutes to throw together; and, cooks all day, while you are busy doing other things. I like to serve this with flatbread, pita, or naan; and a creamy tzatziki type of sauce. Add a side salad or fruit, for a quick and easy weeknight dinner. I saw a basic recipe for this online a few months ago, and was curious. I was pleasantly surprised how good it was; But, for my second try, I did add a few touches - from comments, and other recipes; and, came up with this version. The addition of the sweet potatoes, and a little tomato paste really adds a nice richness to the dish."

Step by Step Method
Step 1
Beef ... Beef is difficult to slice thin; so, throw it in the freezer. NOT rock hard; just firm (about 30 minutes) - it makes it very easy to slice. Remember, this will cook 6-7 hours, so you don't want too thin; about 1/4" is what I found works best. Then, add the steak to the crock pot as you prepare the rest of the ingredients.
Step 2
Potatoes and Onions ... The sweet potatoes add a nice sweetness to the dish; but, also a nice texture. Make sure they are small diced; as they will completely break apart as they cook - which is what you want. The same with the onions - very thin sliced. Add them to the crock pot with the steak.
Step 3
Crock Pot Sauce ... Add the tomato paste, lemon juice, vinegar, olive oil, curry, salt, and pepper to the crock pot; and mix until everything in the pot is well combined.
Step 4
Cook ... Turn on low; and 6 hours later (for my pot); it should be done, and the meat tender. Remember, all POTS cook differently. 5 1/2-6 hours works best for me. My smaller pot, took 7-7 1/2 hours; so, just be aware of that. The newer and larger pots cook hotter than the - older smaller ones. Note: If you can; about a hour before serving - stir, and check for any additional seasoning if necessary.
Step 5
Yogurt Sauce ... Add the cucumber, yogurt, scallions, a pinch of both salt, and pepper, to the blender or small food processor; and pulse a couple of times until combined. You don't want a smooth sauce; you want something with a little texture. Then, transfer to a bowl; and, re-season if necessary. Cover; and, chill until ready to serve. This is even better made in advance.
Step 6
Serve and ENJOY! ... Serve the beef with warm flatbread, naan, or pita. Add some of the beef and yogurt sauce, fold up and enjoy. On the side; a nice salad and fruit. A simple, easy dinner! I like it as is; but some people add olives, tomato slices, extra cucumber, even spinach. I don't find it necessary. I do however like a little fresh mint as a garnish. Simple comfort food; and, easy is the best part.
