"This simple recipe is one my daughter found in a leaflet type cookbook handed out to university students who lived in the dorms at the university she attended. The only appliances allowed in the dorm rooms were bar size fridges and microwaves. This cookbook was full of easy microwave recipes and this is one she made quite often and I enjoy it also. This can easily be made gluten free by using gluten free buns, mayo and cheese."

Step by Step Method

Step 1

Coat a deep cereal bowl with non-stick spray and crack the eggs inside the bowl.

Step 2

Poke both yolks with a fork, season with salt and pepper and place in microwave.

Step 3

Cook at high power for approximately 2 minutes, this will depend on the size and power of the microwave oven you are using. (I have a high powered oven and 1 minute 45 seconds is enough time for me).

Step 4

Place the cheese on the bottom bun along with the egg then top with lettuce, tomato and onion.

Step 5

Spread the mayo on the top bun and place over the slice of onion and enjoy your hearty breakfast.
