Step 1: Coat a deep cereal bowl with non-stick spray and crack the eggs inside the bowl.
Step 2: Poke both yolks with a fork, season with salt and pepper and place in microwave.
Step 3: Cook at high power for approximately 2 minutes, this will depend on the size and power of the microwave oven you are using. (I have a high powered oven and 1 minute 45 seconds is enough time for me).
Step 4: Place the cheese on the bottom bun along with the egg then top with lettuce, tomato and onion.
Step 5: Spread the mayo on the top bun and place over the slice of onion and enjoy your hearty breakfast.
