Step 1
Saute the onion, bell pepper and garlic until translucent.
Step 2
Lightly spray a 9×13 pan with cooking spray.
Step 3
Spread the bottom of the pan with half of the Doritos .
Step 4
Reserve one cup of cheese.
Step 5
Mix together remaining ingredients and the sauteed veggies in a large bowl.
Step 6
Pour chicken mixture over the Doritos.
Step 7
Top casserole with the remaining cheese and Doritos.
Step 8
Bake 30 minutes at 350 degrees or until bubbly.
