  • 375 grams cooked chicken (cooked, 3 cups cubed)
  • 1 cup sour cream
  • 1 can (10 ounce) condensed cream of chicken soup (undiluted)
  • 1 can (10 ounce) corn kernels (drained)
  • 1 can (10 ounce) Rotel, drained
  • 1 can (4 ounce) green chilies
  • 1/2 cup minced onion
  • 2 cups shredded cheddar cheese (divided)
  • 1 tablespoon Mexican Seasoning (By McCormick)
  • 1/2 teaspoon pepper
  • 1/2 green bell pepper (diced)
  • 2 garlic cloves, minced
  • 1 bag (10 ounce) Doritos (Nacho cheese Doritos, crushed)

How to Make

  • Step 1: Saute the onion, bell pepper and garlic until translucent.

  • Step 2: Lightly spray a 9×13 pan with cooking spray.

  • Step 3: Spread the bottom of the pan with half of the Doritos .

  • Step 4: Reserve one cup of cheese.

  • Step 5: Mix together remaining ingredients and the sauteed veggies in a large bowl.

  • Step 6: Pour chicken mixture over the Doritos.

  • Step 7: Top casserole with the remaining cheese and Doritos.

  • Step 8: Bake 30 minutes at 350 degrees or until bubbly.
