Step by Step Method
Step 1
Rub sweet paprika (like you would flour) over entire surface of both sides of meat.
Step 2
Place layer of sliced onions over entire surface of meat.
Step 3
Spread a layer of pimentos over the onions.
Step 4
Then sauté mushrooms in oil and butter.
Step 5
Then put layer on meat.
Step 6
Spread the Hollandaise sauce over all other ingredients.
Step 7
Put a row of green olives stuffed with pimentos over the meat.
Step 8
Roll meat and tie at 6 or 7 places with a strong cord.
Step 9
Sear both sides of the roll of meat in a very hot deep skillet that you have cooked mushrooms in.
Step 10
Then put in a deep roaster.
Step 11
Add red cooking wine (Doris says I use salted wine, not used for drinking, which can be purchased in a gourmet shop).
Step 12
Place in oven at 300 degrees and cook for 2 hours, basting frequently. ( if your steak is not tenderized you may need more cooking time with today's meat )
