"I wanted something other than the classic green bean casserole last Thanksgiving, so I came up with this recipe. Very cheesy with bacon and onion. Contains no soup and of course, crunchy onions to top. New family favorite."

Step by Step Method

Step 1

To make the Bechamel - Melt butter in sauce pan, add flour and stir to combine. Cook over medium heat for one or two minutes - do not brown, it will be a pale roux.

Step 2

Gradually add the 2 cups milk, stirring constantly.

Step 3

Reduce to low heat and add the parmesan, stirring until it melts. Set aside.

Step 4

Dice bacon into bite sized pieces, saute until brown.

Step 5

Drain bacon on paper towels, reserving a few tablespoons of the grease. Set aside.

Step 6

Saute' the diced onion in the reserved bacon grease until it starts to soften, then add mushrooms, thyme, onion powder, black pepper and paprika and continue to saute' until the mushrooms start to brown.

Step 7

Stir in the white wine and scrape up any browned bits.

Step 8

In a very large bowl, add green beans and toss with the cheddar cheese.

Step 9

Add the bacon and then the onion and mushroom mixture.

Step 10

Pour the bechamel over all and mix well.

Step 11

Top with the French Fried Onions and bake at 350 for 30 minutes or until heated through.
