Step by Step Method
Step 1
Line a cookie sheet with parchment paper and then put the beef on the pan and using 2 forks spread the meat out. In a bowl combine the seasoning (paprika - cumin plus 1 1/4 teaspoons salt and 1/2 teaspoon pepper) and sprinkle over the beef. Freeze for 20 minutes or until meat is very cold and beginning to firm up.
Step 2
Using a rubber spatula fold the spice mixture into the beef. If frozen let it stand for 10 minutes or until it is workable. Divide the beef into 4 portions and shape each portion into a 4 inch patty and about 1/2 inch thick.
Step 3
Prepare grill to medium high.
Step 4
Grill burgers for 3-5 minutes on one side or until well charred and then flip the patties and cook for another 3-5 minutes so both sides are well charred.
Step 5
Serve on buns with your choice of condiments and smoked paprika and cumin ketchup.
