Step by Step Method
Step 1
Preheat oven to 350 degrees F.
Step 2
In a large saucepan, place sliced potatoes and cover with cold water. Bring to boil and cook 5 minutes. Drain well.
Step 3
In a medium saucepan, melt butter and whisk in flour over medium-low heat. Let cook for 1 minute. Whisk in milk and turn heat up to medium. Continue whisking till mixture just begins to boil and thickens. Season with salt, pepper, ground thyme and cayenne. Whisk in cream cheese till it all melts in. Then add in cheddar cheese and mix till its melted. Remove from heat.
Step 4
In a lightly greased (or sprayed with Pam) one quart baking dish, spread out half of the par-boiled potatoes. Then sprinkle on half the ham, onions and peppers. Then pour half the cheese sauce over it. Layer again with remaining potatoes, ham, onions and peppers and top with remaining cheese sauce. Spread it evenly over the top to completely cover it. Sprinkle with paprika.
Step 5
Bake uncovered in preheated 350 degree F. oven for 45 minutes to 1 hour.
