"This is such an easy and quick marinade. It is delicious with both shrimp and scallops. I do suggest that this recipe should be grilled if possible; even a grill pan would work just fine. Serve over a lemon herb orzo, and grilled zucchini on the side; for a very quick dinner. Prep time does NOT include marinating time."

Step by Step Method

Step 1

Marinade ... Add the mayonnaise, garlic, oyster sauce, lemon juice, sugar, and lemon pepper to a small bowl; and, mix to combine. Add the shrimp or scallops and toss to combine. Cover with plastic wrap, and refrigerate 30 minutes up to an hour - but no longer.

Step 2

Shrimp or Scallops ... Make sure to take the seafood out of the refrigerator, and out of the marinade; and, transfer to a plate to take the chill off. You never want to cook with cold seafood.

Step 3

Grill ... Now, as mentioned; I like a grill pan or outside grill; I think you get a much better favor. If using an outside grill, I usually skewer the seafood to make it easier. If using an inside grill pan, it is not necessary. Grill on high heat; and, make sure to oil the pan or grill first. They can also be done in a heavy pan, such as a cast iron pan. The shrimp will take about 3-4 minutes per side; scallops a minute or two less. However, it really depends on the method in which you decide to cook them. An outside grill take take a few minutes longer.

Step 4

Serve and ENJOY! ... As mentioned, I like to serve over a simple lemon herb orzo, and garnish with scallions; and, maybe some grilled vegetables on the side. It is quick and easy. The mayonnaise crease almost a 'crust' on the seafood, which is really delicious.
