Step by Step Method

Step 1

In a large deep skillet brown the beef and onion; remove to a bowl.

Step 2

In the same deep skillet at 2 tablespoons of butter and diced carrot, onions and celery. Saute until tender over medium heat.

Step 3

Stir in cubed potatoes, chicken broth, italian seasoning, and garlic powder.

Step 4

Bring to a boil, reduce heat, cover and simmer just until potatoes are tender (but not to soft).

Step 5

Remove from heat and set aside.

Step 6

In a large soup pot, melt 4 tablespoons of butter.

Step 7

Whisk in flour a little at a time stirring constantly over medium heat; Cook for 1-2 minutes.

Step 8

Stir in warm milk and warm heavy cream.

Step 9

Stir in cheddar cheese until mixture is smooth and creamy. Do NOT bring to a boil or simmer.

Step 10

Pour meat & vegetable mixture into the cheese sauce and stir until well combined.

Step 11

Taste and add in additional salt, black pepper if needed.

Step 12

Ladle in bowl, serve with toppings
