Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef ground turkey (or you could use bulk Italian sausage or the links)
  • 6 tablespoons butter, divided
  • 1 medium yellow onion, chopped
  • 1 large carrot, peeled and diced
  • 1 celery stalk, diced
  • 3 russet potatoes, peeled and diced into small cubes
  • 3 cups chicken broth
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • 5 tablespoons all-purpose flour
  • 1 cup whole milk, warmed
  • 1 cup heavy cream, warmed
  • 3 cups sharp cheddar cheese, shredded
  • Optional Toppings
  • Shredded cheese
  • Chopped bacon
  • Diced roma tomatoes,
  • Shredded cheese,
  • Pickles
  • Croutons

How to Make

  • Step 1: In a large deep skillet brown the beef and onion; remove to a bowl.

  • Step 2: In the same deep skillet at 2 tablespoons of butter and diced carrot, onions and celery. Saute until tender over medium heat.

  • Step 3: Stir in cubed potatoes, chicken broth, italian seasoning, and garlic powder.

  • Step 4: Bring to a boil, reduce heat, cover and simmer just until potatoes are tender (but not to soft).

  • Step 5: Remove from heat and set aside.

  • Step 6: In a large soup pot, melt 4 tablespoons of butter.

  • Step 7: Whisk in flour a little at a time stirring constantly over medium heat; Cook for 1-2 minutes.

  • Step 8: Stir in warm milk and warm heavy cream.

  • Step 9: Stir in cheddar cheese until mixture is smooth and creamy. Do NOT bring to a boil or simmer.

  • Step 10: Pour meat & vegetable mixture into the cheese sauce and stir until well combined.

  • Step 11: Taste and add in additional salt, black pepper if needed.

  • Step 12: Ladle in bowl, serve with toppings
