Step by Step Method

Step 1

Mix milk with butter, egg yolks, cornmeal, sugar and rye flour; let rest 15 minutes for flours to soften. Add in lemon juice mix.

Step 2

Beat egg whites stiff. Fold in baking soda and baking powder.

Step 3

Pam spray the heck out of waffle iron every time as these guys stick.

Step 4

Batter will be thick so use a little less than 1/2 cup of batter and spread it out a little (the longer you cook these the crisper they will be).
