Ingredients

The ingredients are:
  • 2 cups milk
  • 1 tablespoon lemon juice
  • 2 large eggs
  • 2 teaspoons granulated sugar
  • 2 cups cornmeal
  • 1 cup rye flour
  • 1/2 cup butter, melted
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

How to Make

  • Step 1: Mix milk with butter, egg yolks, cornmeal, sugar and rye flour; let rest 15 minutes for flours to soften. Add in lemon juice mix.

  • Step 2: Beat egg whites stiff. Fold in baking soda and baking powder.

  • Step 3: Pam spray the heck out of waffle iron every time as these guys stick.

  • Step 4: Batter will be thick so use a little less than 1/2 cup of batter and spread it out a little (the longer you cook these the crisper they will be).
