Step by Step Method

Step 1

In a large bowl combine the flour, sugar, baking powder, cinnamon and salt.

Step 2

In another bowl, combine milk and coffee granules until coffee is dissolved; add the melted butter, egg and vanilla then stir into dry ingredients JUST until moistened.

Step 3

Mix in chocolate chips.

Step 4

Fill greased or paper-lined muffin cups two-thirds full.

Step 5

Bake at 350 degrees (preheated oven) degrees for 17-20 minutes or until a toothpick inserted near the center.

Step 6

Cool then drizzle tops of muffins with a glaze made by combining milk or light cream with confectioners sugar until a drizzling consistancy.
