Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • 3/4 to 1 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons instant coffee granules
  • 1/2 cup butter, melted
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 to 3/4 cup miniature semisweet chocolate chips
  • Glaze, optional

How to Make

  • Step 1: In a large bowl combine the flour, sugar, baking powder, cinnamon and salt.

  • Step 2: In another bowl, combine milk and coffee granules until coffee is dissolved; add the melted butter, egg and vanilla then stir into dry ingredients JUST until moistened.

  • Step 3: Mix in chocolate chips.

  • Step 4: Fill greased or paper-lined muffin cups two-thirds full.

  • Step 5: Bake at 350 degrees (preheated oven) degrees for 17-20 minutes or until a toothpick inserted near the center.

  • Step 6: Cool then drizzle tops of muffins with a glaze made by combining milk or light cream with confectioners sugar until a drizzling consistancy.
