Step by Step Method

Step 1

Preheat oven to 250 degrees F (this is to keep waffles warm as you make them).

Step 2

In a bowl whisk together the dry ingredients (flour -salt). Make a well in center and add egg yolks, buttermilk, oil and vanilla and blend with a fork mixing until combined.

Step 3

Using an electric mixer on medium high speed beat the egg whites until soft peaks form. Fold egg whites into the batter until combined and then fold in the chocolate.

Step 4

Heat a waffle iron until very hot and spray with cooking spray and working in batches cook waffles until cooked through. As waffles finish cooking transfer them to a wire rack set inside a cookie sheet and then cover waffles with foil and keep warm in preheated oven.

  • When selecting the olive oil, choose one with a mild flavor that won't overpower the other ingredients.
  • For the bittersweet chocolate, look for a high-quality brand that is at least 60-70% cocoa.

  • Replace the olive oil with melted butter: Butter will add a richer, creamier flavor to the waffles, making them even more delicious.
  • Replace the bittersweet chocolate with dark chocolate chips: Dark chocolate chips will provide a more intense chocolate flavor and a delightful texture to the waffles.

Nutella Waffles Replace the chopped bittersweet chocolate with Nutella and reduce the amount of olive oil to 1/4 cup.

Berry Compote: This sweet and tangy compote is the perfect accompaniment to the rich chocolate waffles. It adds a refreshing, fruity flavor to the dish, and its bright color looks beautiful when served.

Vanilla Ice Cream: Vanilla ice cream is a classic accompaniment to chocolate waffles. Its creamy sweetness complements the rich flavors of the waffles and the tartness of the compote. It also adds a cool contrast to the warm waffles, making it a perfect complement to this dish.
