Ingredients

The ingredients are:
  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder (Hersey's)
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 3 eggs, separated
  • 2 cups buttermilk
  • 1/2 cup olive oil
  • 1 teaspoon vanilla
  • 6 ounces bittersweet chocolate (chopped)

How to Make

  • Step 1: Preheat oven to 250 degrees F (this is to keep waffles warm as you make them).

  • Step 2: In a bowl whisk together the dry ingredients (flour -salt). Make a well in center and add egg yolks, buttermilk, oil and vanilla and blend with a fork mixing until combined.

  • Step 3: Using an electric mixer on medium high speed beat the egg whites until soft peaks form. Fold egg whites into the batter until combined and then fold in the chocolate.

  • Step 4: Heat a waffle iron until very hot and spray with cooking spray and working in batches cook waffles until cooked through. As waffles finish cooking transfer them to a wire rack set inside a cookie sheet and then cover waffles with foil and keep warm in preheated oven.
