Step 1: Preheat oven to 250 degrees F (this is to keep waffles warm as you make them).
Step 2: In a bowl whisk together the dry ingredients (flour -salt). Make a well in center and add egg yolks, buttermilk, oil and vanilla and blend with a fork mixing until combined.
Step 3: Using an electric mixer on medium high speed beat the egg whites until soft peaks form. Fold egg whites into the batter until combined and then fold in the chocolate.
Step 4: Heat a waffle iron until very hot and spray with cooking spray and working in batches cook waffles until cooked through. As waffles finish cooking transfer them to a wire rack set inside a cookie sheet and then cover waffles with foil and keep warm in preheated oven.
