Step by Step Method
Step 1
Line an 8 inch square pan with foil and butter foil.
Step 2
Over very low heat, melt chocolate in pan.
Step 3
Add sugar, corn syrup, and milk.
Step 4
Increase heat to medium and cook, stirring constantly till the sugar dissolves. Wash sugar crystals from side of pan.
Step 5
Cook to the soft ball stage, or 238F on candy thermometer.
Step 6
Remove from heat, add butter but do not stir.
Step 7
Cool to 120F and add vanilla
Step 8
Beat until mixture begins to thicken and looses it's gloss.
Step 9
Quickly pour mixture into the pan and let cool
Step 10
Cut into squares and store in an airtight container
