Step by Step Method
Step 1
In a mixing bowl, combine the shredded cooked chicken and red enchilada sauce. Stir well until the chicken is evenly coated. Set aside.

Take two slices of bread and spread butter on one side of each slice. Place the bread slices, buttered side down, on a clean surface or plate.

Place a slice of pepper jack cheese on each slice of bread, covering the unbuttered side.

Divide the chicken mixture evenly and spread it on top of the pepper jack cheese on one slice of bread.

Sprinkle shredded cheddar cheese on top of the chicken mixture.

Carefully place the other slice of bread on top, ensuring the buttered side is facing up.

Preheat a non-stick skillet or griddle over medium heat. Spread a little butter on the outside of each sandwich.

Place the sandwiches, buttered side down, on the skillet or griddle. Cook for about 4-6 minutes, or until the bread is golden brown and crispy.

Carefully flip the sandwiches over using a spatula, and cook for an additional 4-6 minutes, or until the cheese is melted and the bread is toasted.
