"Another way to use up leftover (or rotisserie) chicken! Adjust the spiciness of the sandwiches with the canned enchilada sauce. You can use any bread of you have but a thicker, heartier bread holds up to the saucy chicken best."

Step by Step Method

Step 1

In a mixing bowl, combine the shredded cooked chicken and red enchilada sauce. Stir well until the chicken is evenly coated. Set aside.

Stovetop Directions:

Step 2

Take two slices of bread and spread butter on one side of each slice. Place the bread slices, buttered side down, on a clean surface or plate.

Step 3

Place a slice of pepper jack cheese on each slice of bread, covering the unbuttered side.

Step 4

Divide the chicken mixture evenly and spread it on top of the pepper jack cheese on one slice of bread.

Step 5

Sprinkle shredded cheddar cheese on top of the chicken mixture.

Step 6

Carefully place the other slice of bread on top, ensuring the buttered side is facing up.

Step 7

Preheat a non-stick skillet or griddle over medium heat. Spread a little butter on the outside of each sandwich.

Step 8

Place the sandwiches, buttered side down, on the skillet or griddle. Cook for about 4-6 minutes, or until the bread is golden brown and crispy.

Step 9

Carefully flip the sandwiches over using a spatula, and cook for an additional 4-6 minutes, or until the cheese is melted and the bread is toasted.

Step 10

Once the sandwiches are cooked, remove them from the skillet or griddle. Let them cool for a minute or two before slicing in half. Serve hot with your desired toppings.
