Step 1: In a mixing bowl, combine the shredded cooked chicken and red enchilada sauce. Stir well until the chicken is evenly coated. Set aside.
Step 2: Take two slices of bread and spread butter on one side of each slice. Place the bread slices, buttered side down, on a clean surface or plate.
