Heat 1 tablespoon oil in skillet.
Toss chicken cubes with flour, salt, pepper and creole seasoning.
Add to skillet and brown on all sides,
Push chicken to outside of skillet add onion, green pepper and celery.
Saute together until veggies are starting to get tender.
Add prepared creole sauce and simmer until chicken in completely done.
To Make Ahead Creole Sauce
Heat 1 tablespoon oil.
Add onions, green pepper and garlic until onions are starting to caramelize.
Add wine and scrape up all bits of veggies.
Add tomato sauce, tomatoes, oregano, cumin, salt and pepper.
Simmer about 15 minutes, or until sauce is reduced slightly.
