Step 1: Heat 1 tablespoon oil in skillet.
Step 2: Toss chicken cubes with flour, salt, pepper and creole seasoning.
Step 3: Add to skillet and brown on all sides,
Step 4: Push chicken to outside of skillet add onion, green pepper and celery.
Step 5: Saute together until veggies are starting to get tender.
Step 6: Add prepared creole sauce and simmer until chicken in completely done.
Step 7: Heat 1 tablespoon oil.
Step 8: Add onions, green pepper and garlic until onions are starting to caramelize.
Step 9: Add wine and scrape up all bits of veggies.
Step 10: Add tomato sauce, tomatoes, oregano, cumin, salt and pepper.
Step 11: Simmer about 15 minutes, or until sauce is reduced slightly.
