Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 12 ounce boneless skinless chicken breast (cut into cubes)
  • 1 tablespoon flour
  • 1/4 teaspoon salt and pepper
  • 1/2 teaspoon creole seasoning (or similar)
  • 1/4 teaspoon granulated garlic
  • 1/8 cup green pepper (finely chopped)
  • 1/8 cup onions, finely chopped
  • 1/8 cup celery, chopped
  • 1 cup creole sauce (prepared, see below)
  • 1 green onion, chopped, for garnish
  • FOR CREOLE SAUCE
  • 1 tablespoon olive oil
  • 1/2 onion (medium Spanish onion, finely chopped)
  • 1/2 green bell pepper, (cored, seeded, finely chopped)
  • 2 tablespoons garlic, minced
  • 1/4 cup dry white wine
  • 8 ounces tomato sauce
  • 14 ounces diced tomatoes (with liquid, canned tomatoes)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • Salt & pepper, to taste

How to Make

  • Step 1: Heat 1 tablespoon oil in skillet.

  • Step 2: Toss chicken cubes with flour, salt, pepper and creole seasoning.

  • Step 3: Add to skillet and brown on all sides,

  • Step 4: Push chicken to outside of skillet add onion, green pepper and celery.

  • Step 5: Saute together until veggies are starting to get tender.

  • Step 6: Add prepared creole sauce and simmer until chicken in completely done.

  • To Make Ahead Creole Sauce

  • Step 7: Heat 1 tablespoon oil.

  • Step 8: Add onions, green pepper and garlic until onions are starting to caramelize.

  • Step 9: Add wine and scrape up all bits of veggies.

  • Step 10: Add tomato sauce, tomatoes, oregano, cumin, salt and pepper.

  • Step 11: Simmer about 15 minutes, or until sauce is reduced slightly.
