Step 1

In medium saucepan, melt butter. Cook onion and garlic in butter until onion is soft. Remove from heat. Stir in potatoes and cheese.

What a find this recipe was! I followed the recipe exactly and it was beyond perfect. Sauteing the the onions and garlic mellows them and adds just the right amount of flavor to the potatoes. The cheese takes it over the top. DH requested that the next time I make this, that I double it so we can have leftovers of this leftover casserole! Thanks for posting this fantastic recipe, Racr.
