Step by Step Method
Step 1
Bake the potato until it's fork-tender (or you could wrap the whole potato in a wet paper towel and microwave 4-6 minutes per side) Remove from oven or microwave and let cool a bit.
Step 2
Slice the potato in half length-wise.
Step 3
Scoop a generous portion of the potato pulp out from the middle from the 2 potato halves.
Step 4
Season the two halves with salt and pepper.
Step 5
Fill each hole with 1/4 cup shredded cheddar cheese, 1 egg, 2 tablespoons (or more) of bacon bits.
Step 6
Bake at 400°F for 15-20 minutes or until egg is cooked to your preference.
Step 7
Top with sour cream and chopped green onion (if desired).
