I wanted to make Chicken Piccata and thought this would go well with it. It was delicious and we loved it with the chicken!

Every time I have quinoa, I smack my forehead and think we should have this more often, and then I forget to make it again for months. This is one of the better recipes we have had and I will try to make it again soon. Great flavor and very easy to make. Went great with fish.
