"I was having a " MAJOR " chili craving and didn't have all the ingredients for the chili I wanted. So I just improvised with the items that were on hand. If you think the chili ready tomatoes in the recipe will be to spicy for you or the kiddies,use regular canned tomatoes.Also if you don't have kidney beans,use pintos.Feel free to adjust the amount of Cajun Seasoning to suit yours and your family's tastes.Speaking of the seasoning,I used #recipe5279 but use whatever you have on hand.I guess you could make this in a Slow Cooker,just prepare beef as directed in recipe.As with most chili recipes,the longer you let it simmer the better. Step by Step Method

Step 1

In a 3 1/2 quart deep sided saute' pan over medium heat,(or whatever pan is large enough to hold all the ingredients)add ground beef,onion,1 teaspoon seasoning,and pepper.

Step 2

Cook and stir until meat is browned and seasonings are well combined.

Step 3

Drain,return meat mixture to pan and add flour, cook until flour taste is gone about 3 minutes.

Step 4

Add remaining ingredients and stir well.

Step 5

Turn up heat and bring to a boil,then reduce to simmer.

Step 6

Simmer for 30 to 45 minutes,stirring occasionally.

Step 7

Eat and enjoy,if desired serve over Nachos.
