Step by Step Method
Step 1
Heat olive oil in medium pot over medium-high heat.
Step 2
Add mushrooms, onions and garlic.
Step 3
Cook and stir until vegetables begin to soften, about 3 minutes.
Step 4
Stir in rice; cook for 1 more minute.
Step 5
Add broth and salt (if using).
Step 6
Bring to a boil.
Step 7
Reduce heat to low and simmer, covered, for about 20 minutes (check suggested cooking time on rice or grain package since brands vary)
Step 8
Remove from heat.
Step 9
Stir in cranberries, pistachios, parsley and lemon zest.
Step 10
Let stand, covered for 10 minutes before serving.
