Step 1: Heat olive oil in medium pot over medium-high heat.
Step 2: Add mushrooms, onions and garlic.
Step 3: Cook and stir until vegetables begin to soften, about 3 minutes.
Step 4: Stir in rice; cook for 1 more minute.
Step 5: Add broth and salt (if using).
Step 6: Bring to a boil.
Step 7: Reduce heat to low and simmer, covered, for about 20 minutes (check suggested cooking time on rice or grain package since brands vary)
Step 8: Remove from heat.
Step 9: Stir in cranberries, pistachios, parsley and lemon zest.
Step 10: Let stand, covered for 10 minutes before serving.
