Ingredients

The ingredients are:
  • 2 teaspoons olive oil (or butter)
  • 2 cups chopped mushrooms (finely chopped)
  • 1 cup minced red onion
  • 1 teaspoon minced garlic
  • 8 ounces dry rice (1 cup uncooked brown rice, or any rice or grain you like, cook as per package directions with appropriate amount of broth)
  • 2 cups low-sodium chicken broth (or vegetable broth)
  • 1/2 teaspoon salt
  • 1/4 cup chopped dried cranberries
  • 1/4 cup chopped pistachios
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons grated lemon zest

How to Make

  • Step 1: Heat olive oil in medium pot over medium-high heat.

  • Step 2: Add mushrooms, onions and garlic.

  • Step 3: Cook and stir until vegetables begin to soften, about 3 minutes.

  • Step 4: Stir in rice; cook for 1 more minute.

  • Step 5: Add broth and salt (if using).

  • Step 6: Bring to a boil.

  • Step 7: Reduce heat to low and simmer, covered, for about 20 minutes (check suggested cooking time on rice or grain package since brands vary)

  • Step 8: Remove from heat.

  • Step 9: Stir in cranberries, pistachios, parsley and lemon zest.

  • Step 10: Let stand, covered for 10 minutes before serving.
