Step by Step Method

Step 1

In a large skillet, saute onion in butter until tender; set aside. In a large bowl combine both boxes of corn bread mix and shredded cheese.

Step 2

In another bowl, beat the eggs, cottage cheese and onion mixture. Stir into corn bread mixture just until moistened. Fold in the broccoli, corn and jalapeno.

Step 3

Transfer to a greased 13-inch x 9-inch baking pan. Bake at 400° for 35-40 minutes or until lightly browned and edges pull away from sides of pan.

Step 4

This is best when served warm.

This was good but I cut the butter down to 2 tablespoons I could not imagine using 1 cup of butter, for anyone making this recipe this may just be a typo, I served this tonight with grilled chicken, thank you!
