"It seems that the invention of the Tom Collins was a 19th century hoax and the story goes like this: In 1874, hundreds of New Yorkers heard some bad news while they were out on the town: a certain Tom Collins had been besmirching their good names. Although these people didn't know Mr. Collins, they were outraged that he would slander them, and they often set out to find the rascal. Of course, the root of the hoax was that there wasn't really a Tom Collins, but that didn't keep aggrieved parties from searching him out. To deepen the joke, bartenders started making the citrus cocktail that now bears the name, so when searchers asked for Tom Collins, they could instead find a thirst-quenching long drink."

Step by Step Method

Step 1

Put blackberries in a highball glass, add lime juice, and sugar and muddle (smash it all together with a pestle or something similar)

Step 2

Add ice, then pour in gin, blackberry liqueur and club soda. Stir, garnish with a couple extra cut blackberries if you’d like, and enjoy

This was a simple refreshing cocktail. We thought the blackberry was a little light so added more along with a little extra sugar to balance the lime juice. Next time I'll add a dash of something else to give it a little more complexity. I loved the color and how summery it looked! made for Culinary Quest 3 by one of the Iota Eta Pi

This was quite a refreshing cocktail. My limes were a tad sour, so I added almost twice the amount of sugar so it was more at the level of sweetness as my favorite Tom Collins recipe. But other than that, it was made exactly as the recipe is written, and it was great. The blackberries were a nice addition. Thanks for sharing your recipe, ForeverMama.
