Step by Step Method

Step 1

Wash potato skins and prick with a fork.

Step 2

Bake the potatoes in a preheated 400 degree F oven for 60-70 minutes or until tender; cool slightly.

Step 3

Cut a thin slice off the top of each potato.

Step 4

Carefully scoop out the pulp leaving a 1/4-inch shell.

Step 5

In a large bowl mash the pulp with butter and cream, then season with salt and pepper to taste; set aside.

Step 6

In a skillet cook the beef and onion over medium heat until meat is no longer pink; drain.

Step 7

Add in garlic; cook for 2 minutes.

Step 8

Cool beef mixture about 15-20 minutes, then mix in the bacon and sour cream.

Step 9

Season with salt and pepper, then spoon into potato shells.

Step 10

Top each with a fourth of the mashed potato mixture, then sprinkle with shredded cheese (use as much cheese as you like).

Step 11

Place potatoes on an ungreased baking sheet.

Step 12

Bake in a 400 degree F oven for 20-25 minutes or until heated through.
