Step 1: Wash potato skins and prick with a fork.
Step 2: Bake the potatoes in a preheated 400 degree F oven for 60-70 minutes or until tender; cool slightly.
Step 3: Cut a thin slice off the top of each potato.
Step 4: Carefully scoop out the pulp leaving a 1/4-inch shell.
Step 5: In a large bowl mash the pulp with butter and cream, then season with salt and pepper to taste; set aside.
Step 6: In a skillet cook the beef and onion over medium heat until meat is no longer pink; drain.
Step 7: Add in garlic; cook for 2 minutes.
Step 8: Cool beef mixture about 15-20 minutes, then mix in the bacon and sour cream.
Step 9: Season with salt and pepper, then spoon into potato shells.
Step 10: Top each with a fourth of the mashed potato mixture, then sprinkle with shredded cheese (use as much cheese as you like).
Step 11: Place potatoes on an ungreased baking sheet.
Step 12: Bake in a 400 degree F oven for 20-25 minutes or until heated through.
