Ingredients

The ingredients are:
  • 4 large russet potatoes
  • 3 tablespoons butter
  • 1/4 to 1/3 cup half and half cream ( or 18% table cream)
  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 large garlic cloves, minced
  • 6 bacon strips, cooked and crumbled
  • 1/2 cup sour cream
  • Seasoned salt and fresh ground black pepper, to taste
  • Shredded cheddar cheese (use amount desired)

How to Make

  • Step 1: Wash potato skins and prick with a fork.

  • Step 2: Bake the potatoes in a preheated 400 degree F oven for 60-70 minutes or until tender; cool slightly.

  • Step 3: Cut a thin slice off the top of each potato.

  • Step 4: Carefully scoop out the pulp leaving a 1/4-inch shell.

  • Step 5: In a large bowl mash the pulp with butter and cream, then season with salt and pepper to taste; set aside.

  • Step 6: In a skillet cook the beef and onion over medium heat until meat is no longer pink; drain.

  • Step 7: Add in garlic; cook for 2 minutes.

  • Step 8: Cool beef mixture about 15-20 minutes, then mix in the bacon and sour cream.

  • Step 9: Season with salt and pepper, then spoon into potato shells.

  • Step 10: Top each with a fourth of the mashed potato mixture, then sprinkle with shredded cheese (use as much cheese as you like).

  • Step 11: Place potatoes on an ungreased baking sheet.

  • Step 12: Bake in a 400 degree F oven for 20-25 minutes or until heated through.
