Step by Step Method
Step 1
Preheat oven to 400 degrees F.
Step 2
Combine the curry powder and 1/2 of the olive oil in a mixing bowl.
Step 3
Toss the sweet potato and asparagus mixture with the seasoned olive oil.
Step 4
Lay on a baking sheet and roast until tender (30-40 minutes).
Step 5
Before vegetables are done, heat a skillet over medium high heat and add remaining oil.
Step 6
Season the steak with salt and pepper and sear on both sides until steak is cooked to your liking.
