Beef Filet With Fresh Ground Pepper

Step 1

Trim any excess fat from fillets if necessary. Heat butter and olive oil in a skillet. Dip steaks in pepper and season with salt. Pan fry in hot butter and oil until cooked as desired, turning to evenly brown both sides. Add brandy and flambé. Remove steak from skillet to a serving plate and keep warm.

Step 2

Add wine and shallots to skillet and sauté 5 minutes. Add stock and butter and cook approximately 2 minutes longer. Sauce should thicken slightly.

Step 3

Serve sauce with steak.

I used a 1 lb piece of NY Sirloin steak and changed the amounts of the other ingredients accordingly. Great flavor, steaks were tender, and got compliments from around the table. Score!

Oh yes, this had my name written all over it! Tasted extra delicious to me, with loads of pepper that I love so much, oh, and that wine made the meat so tender and flavorful too. Another winner from Zazz! DH loved it too!
