Step by Step Method

Step 1

Heat oven to 450° F. On a rimmed baking sheet, toss the bell peppers and garlic with 1 tablespoon of the oil and 1/4 teaspoon each salt and black pepper. Roast until tender, 12 to 14 minutes.

Step 2

Meanwhile, heat the remaining tablespoon of oil in a large skillet over medium-high heat. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Add the beef, corn, and chili powder and cook, stirring occasionally, until the beef is browned, 6 to 8 minutes more.

Step 3

Warm the tortillas, then divide the beef mixture among the tortillas and top with the avocado, Cheddar, salsa, and cilantro. Serve with the bell peppers and lime wedges. (Personally, I put the peppers atop the beef, before piling on the garnishes).

I loved these taco's...the hubby didn't like the corn in his meat...(I told him to pick them out)..lol...I used hard shells due to them needing to be used up...it was so hot inside and outside that I cooked the veggies on the stove top in a cast iron skillet...and as Lori suggested I put them in the taco shell...made for "FYC" tag game...

This made a really good dinner for us tonight. The garlicy bell peppers were really a great addition. The corn and the spices in the hamburger also added tasty flavor.

Daily Inspiration

We thoroughly enjoyed these tacos. I used red bell peppers and made the tacos just as directed. Love the earthy taste of the ancho chili powder. I heated the corn tortillas on my griddle and we adorned our tacos with salsa, lime crema, avocado, and queso fresco (couldn't find cotija). Soooo good and a definite repeat at our house.
