Step by Step Method

Step 1

Heat oil in the bottom of a large saucepan to medium heat. Add onions, and cook 3 minutes or until soft. Add in garlic; cook 2 minutes or until soft. Remove the onions and garlic mixture.

Step 2

Season beef with salt and pepper. Add in more oil to the skillet if you need to. Add beef and brown on all sides.

Step 3

Add the onions back into the saucepan with the rest of the ingredients, and bring up to a boil. Reduce to just under a simmer. Cook until barley is very soft, and stock is thick like a gravy (about 2- 2 1/2 hours). Season with salt and peppper.

I made this as directed adding a few chopped carrots and was quite pleased with the flavour, however, I did find this to be too starchy. I will be making this again as I really enjoyed the taste, but using half the barley and liquid. Thanks for sharing your recipe here. Made for the Billboard Recipe Tag Game.
