"Some good substitutes for red snapper in this dish include haddock, black cod, or striped bass. To test fish for doneness, insert a fork into the thickest part of a fillet. It should flake easily. Step by Step Method

Step 1

Heat the oven to 400 F.

Step 2

Place snapper fillets in a baking dish which has been sprayed with a butter-flavored nonstick cooking spray.

Step 3

In a skillet, melt butter with garlic, Worcestershire sauce, Creole seasoning blend, pepper, parsley, and chives, if using.

Step 4

Cook over low heat for 2 minutes, just to blend flavors.

Step 5

Brush both sides of fish fillets with the butter and herb mixture.

Step 6

Toss the breadcrumbs with the remaining butter mixture and cheese, if using.

Step 7

Sprinkle the breadcrumbs over the fillets.

Step 8

Bake in the preheated oven for about 12-15 minutes, depending on the thickness of the red snapper fillets; the fish will be opaque and flake easily with a fork when done.

Delicious! Made for a wonderful evening meal with enough left over for my next days lunch. I used cod fish as that is what I had on hand, used panco crumbs for the same reason, fresh parsley from my indoor herbs, not having chives I snipped in green onion tops making for a dish that dazzled the taste buds. Into my recipe drawer for this seafood lover to see to repeats.

Yum, Yum! I must confess that while the fish was roasting in the oven, I completely forgot about it and it wound up overcooking, but let me tell ya, it was the best overcooked fish I've ever had. I was soooo disappointed when I realized my error, but after tasting it, I was like....Wow. Can you imagine how good a fish this is that even after such a mistake, it remained Delicious! I had an additional filet the next day and it was still delicious. I will be making this again Without forgetting it's in the oven. Thank you, Patti, for sharing such a winner. Made it for Billboard tag.

Very good fish - I used cajun seasoning but forgot the parsley. I also used option 1 using fresh chives and the seasoned breadcrumbs but skipped option 2 (cheese). The fish was great and was enjoyed by all. Thanks for sharing!
