Step by Step Method
Step 1
Preheat oven to 350 degrees F. Grease a muffin tins.
Step 2
In a bowl beat the sugar and egg for 3 minutes.
Step 3
In another bowl combine flour, baking powder, salt and nutmeg; mix into egg mixture. Add in oil, milk and vanilla; beat until combined.
Step 4
Divide the batter evenly between into 9-10 muffin cups filling to about 3/4 full.
Step 5
Bake for 15-18 minutes, until a tester inserted into the center comes out clean.
Step 6
When muffins are baked, brush the top of each warm muffin with some melted butter.
Step 7
Remove muffins from the pan then roll in sugar (can roll the whole muffin or just the tops).
Step 8
Cool on a rack.
