The ingredients are:
  • 3/4 cup sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 2 teaspoons vanilla extract
  • Melted butter
  • Sugar, for coating

How to Make

  • Step 1: Preheat oven to 350 degrees F. Grease a muffin tins.

  • Step 2: In a bowl beat the sugar and egg for 3 minutes.

  • Step 3: In another bowl combine flour, baking powder, salt and nutmeg; mix into egg mixture. Add in oil, milk and vanilla; beat until combined.

  • Step 4: Divide the batter evenly between into 9-10 muffin cups filling to about 3/4 full.

  • Step 5: Bake for 15-18 minutes, until a tester inserted into the center comes out clean.

  • Step 6: When muffins are baked, brush the top of each warm muffin with some melted butter.

  • Step 7: Remove muffins from the pan then roll in sugar (can roll the whole muffin or just the tops).

  • Step 8: Cool on a rack.
