Step by Step Method

Step 1

Preheat broiler.

Step 2

In a skillet over medium heat cook the bacon until crisp but still pliable (5-10 minutes); remove and drain on paper towels.

Step 3

Remove some flesh from each fig half and discard. Fill each fig half with the cheese and then press fig halves together to form a whole fig.

Step 4

In a cup or bowl combine the brown sugar, cumin and salt and then rub on side of each bacon slice with mixture. Wrap one bacon slice, sugared side out, around each fig and secure with toothpick.

Step 5

Broil figs, cheese side up on broiler rack about 3 inches from heat, turning frequently until bacon is browned (2 minutes); cool slightly and then discard toothpicks.

Step 6

Toss the salad greens with lemon juice, salt and pepper; toss with olive oil.

Step 7

Serve figs over the salad greens.
