Autumn Pork Roast and Vegetables - Insta-pot
"This is the time of year that brings out all of these warming and satisfying comfort foods. I love my insta-pot for the ease of getting a meal prepared without a lot of other pots and pans. It smells good as it cooks and gives me time to socialize or pull last minute dinner rolls together. I enjoy the warming and Autumn flavors pulled together in this recipe. Step by Step Method
Step 1
Season and sear the roast on all sides
Step 2
Cut sweet potato in 1" cubes
Step 3
Slice onions
Step 4
Slice celery in 1/2 moons
Step 5
Place roast and add apple juice to instapot
Step 6
Add the rest of the ingredients except beef boullion, flour and water (reserve to make a gravy for the table with it)
Step 7
Pressure cook 30-45 minutes on normal or on meat or stew setting, keep warm setting off.
Step 8
Let pot release pressure normally
Step 9
Make gravy with water, flour and beef boullion and remainder of drippings for table serving
Step 10
Serve with your favorite fresh dinner rolls or bread.
Tips
- Garlic scapes are the tops of growing garlic that must be cut off before the plant goes to flower. You can keep in the freezer for cooking.
