Ingredients

The ingredients are:
  • 2 pounds pork loin roast
  • 1 large sweet potato
  • 1/2 of a large white onion or 1 medium whole
  • 8-10 ounces of apple juice
  • 2-3 stalks of celery
  • 12-20 Amaranth leaves
  • 2-3 garlic scapes whole
  • 1 teaspoon of beef bullion
  • 1 cup water
  • 2 tablespoons of flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 square inch of fresh ginger root

How to Make

  • Step 1: Season and sear the roast on all sides

  • Step 2: Cut sweet potato in 1" cubes

  • Step 3: Slice onions

  • Step 4: Slice celery in 1/2 moons

  • Step 5: Place roast and add apple juice to instapot

  • Step 6: Add the rest of the ingredients except beef boullion, flour and water (reserve to make a gravy for the table with it)

  • Step 7: Pressure cook 30-45 minutes on normal or on meat or stew setting, keep warm setting off.

  • Step 8: Let pot release pressure normally

  • Step 9: Make gravy with water, flour and beef boullion and remainder of drippings for table serving

  • Step 10: Serve with your favorite fresh dinner rolls or bread.


Tips & Variations

Don't forget the following tips and variations.
  • Garlic scapes are the tops of growing garlic that must be cut off before the plant goes to flower. You can keep in the freezer for cooking.
