"Arctic Char is both a saltwater and freshwater fish found in deep icy waters way up north in Canada. It is very similar to trout and salmon. As with most fish fresh ingredients are always best to use, but, the winters are so long the fresh ingredients run out fast. Here is a simple way to cook this tasty fish with dried herbs, spices and pantry items."

Unfortunately I could not find any fresh Arctic char so I subbed fresh wild Snapper. It was delicious. I love using Mayo as a coating for fish as it keeps it so moist. The simple combination of Mayo, lemon, dill with the touch of Onion & garlic gave the fish just the right amount of flavour boost. I'll be using this recipe again hopefully next time with Arctic Char. 6 June 18 Last time I made this recipe I didn't have Arctic char. This time I went to a special fish store and splurged on Arctic char. This store has beautiful fresh fish but they don't even post their prices - the shock comes when they weigh it! It was worth every, not penny but every dollar. The fish was lovely , moist and it flaked perfectly. Thanks Bea you made the price worthwhile. Delicious! PS I used fresh Dill 23 July 18. I love this recipe - this time I used a lovely salmon filet
