"I got this recipe decades ago from a friend who brought them to a potluck dinner I hosted. They got rave reviews & have proven to change the mind of even the most emphatic lima bean non-believer. This is an easy to prepare stovetop-to-table dish & works well w/meat, chicken or seafood that does not already have a cream sauce. I admit they are probably more adult-friendly than kid-friendly, so I suggest you save the green beans & corn for your kids, serve these to your adult family/friends & heed my best advice ~ Plan ahead for 2nd helpings! Step by Step Method
Step 1
Cook frozen lima beans per pkg directions while following remaining steps & set aside.
Step 2
Roughly dice the medium onion & set aside.
Step 3
Cut each large mushroom in half from top down through any stem. Put the cut edge down on your cutting board & slice each half in approximate 1/3-inch slices & set aside.
Step 4
Cut bacon slices in 1/2 inch segments & fry in a non-stick skillet until crisp. If you have more than 2 tbsp of rendered bacon fat, remove the excess of that amount.
Step 5
Add diced onion & sliced mushrooms to skillet & saute until onion is translucent. Do not overcook to caramelized state.
Step 6
Add 1 tsp curry powder + low-fat sour cream & combine well.
Step 7
Taste & add additional curry powder or seasoning salt as desired.
Step 8
Remove skillet from heat, add cooked lima beans, mix well & serve immediately.
