Ingredients

The ingredients are:
  • 565 grams lima beans (3 cups frozen)
  • 6 ounces sliced bacon (6 thick-slices)
  • 1 yellow onion (medium onion, roughly diced)
  • 75 grams whole mushrooms (6 large button, or 8-10 small)
  • 2/3 cup low-fat sour cream
  • 1 teaspoon curry powder (more as desired)
  • Seasoning salt (to taste)

How to Make

  • Step 1: Cook frozen lima beans per pkg directions while following remaining steps & set aside.

  • Step 2: Roughly dice the medium onion & set aside.

  • Step 3: Cut each large mushroom in half from top down through any stem. Put the cut edge down on your cutting board & slice each half in approximate 1/3-inch slices & set aside.

  • Step 4: Cut bacon slices in 1/2 inch segments & fry in a non-stick skillet until crisp. If you have more than 2 tbsp of rendered bacon fat, remove the excess of that amount.

  • Step 5: Add diced onion & sliced mushrooms to skillet & saute until onion is translucent. Do not overcook to caramelized state.

  • Step 6: Add 1 tsp curry powder + low-fat sour cream & combine well.

  • Step 7: Taste & add additional curry powder or seasoning salt as desired.

  • Step 8: Remove skillet from heat, add cooked lima beans, mix well & serve immediately.
