"These muffins are delicious and we love them and have them often. I have made these with Vanilla ice cream, and they tasted really good, but experiment if you want to. You can substitute the orange and zest for lemon or lime too. Experiment and have fun with it!"

Step by Step Method

Step 1

Preheat oven to 400 degrees.

Step 2

Grease muffin cups with oil.

Step 3

In a large bowl, blend together the flour and baking powder.

Step 4

In a medium bowl, beat the egg, oil, and ice cream until smooth. (Do not over beat as this will melt the ice cream) Combine the two mixtures, blending until the dry ingredients are just moistened.

Step 5

Spoon the batter into the prepared muffin cups, filling each cup about three-quarters full.

Step 6

Bake for 15-20 minutes, or until a cake tester or wooden toothpick inserted into the center of a muffin comes out clean. Cool in the pan on a wire rack for 5-7 minutes.

Step 7

Serve warm or invert on to rack to cool completely.

Step 8

Top with Orange Marshmallow Sauce.

Step 9

Orange Marshmallow Sauce: In the top of a double boiler set over simmering water, melt the marshmallows, stirring, until smooth.

Step 10

Remove from the heat, and stir in the orange zest and orange juice. Serve at once.

I used Butter Pecan ice cream and didn't use the sauce. The muffins were delicious and very moist. We liked the crunch from the nuts. Yummy with butter oozing out and dripping down the side. Yummy!

I halved the ingredients to make a smaller batch, and after taking the first bite, I wish I had made the whole amount. I loved the flavor and they were moist, which I love when I have a muffin. I would suggest trying these and see how delicious they are!

I have never seen let alone made a muffin recipe with ice cream, I love baking muffins so when I noticed this muffin recipe at the Billboard game I couldn't pass it up, well let me say I'm happy that I found this one, I think it's the ice cream that creates such a moist muffin with a delicious flavor. Ice cream? yep it works! What a great addition to muffins I think they came out more moister than regular muffins. I'm going to experiment with different flavors next time. I loved these, thanks!
