"These muffins are delicious and we love them and have them often. I have made these with Vanilla ice cream, and they tasted really good, but experiment if you want to. You can substitute the orange and zest for lemon or lime too. Experiment and have fun with it!"

Step by Step Method
Step 1
Preheat oven to 400 degrees.
Step 2
Grease muffin cups with oil.
Step 3
In a large bowl, blend together the flour and baking powder.
Step 4
In a medium bowl, beat the egg, oil, and ice cream until smooth. (Do not over beat as this will melt the ice cream) Combine the two mixtures, blending until the dry ingredients are just moistened.
Step 5
Spoon the batter into the prepared muffin cups, filling each cup about three-quarters full.
Step 6
Bake for 15-20 minutes, or until a cake tester or wooden toothpick inserted into the center of a muffin comes out clean. Cool in the pan on a wire rack for 5-7 minutes.
Step 7
Serve warm or invert on to rack to cool completely.
Step 8
Top with Orange Marshmallow Sauce.
Step 9
Orange Marshmallow Sauce: In the top of a double boiler set over simmering water, melt the marshmallows, stirring, until smooth.
Step 10
Remove from the heat, and stir in the orange zest and orange juice. Serve at once.
