Ingredients

The ingredients are:
  • MUFFINS
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 large egg
  • 2 tablespoons oil (canola oil)
  • 1 pint ice cream (2 cups, your choice)
  • ORANGE MARSHMALLOW SAUCE
  • 16 large marshmallows (each cut into quarters)
  • 2 teaspoons grated orange zest
  • 2 tablespoons orange juice (fresh)

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Grease muffin cups with oil.

  • Step 3: In a large bowl, blend together the flour and baking powder.

  • Step 4: In a medium bowl, beat the egg, oil, and ice cream until smooth. (Do not over beat as this will melt the ice cream) Combine the two mixtures, blending until the dry ingredients are just moistened.

  • Step 5: Spoon the batter into the prepared muffin cups, filling each cup about three-quarters full.

  • Step 6: Bake for 15-20 minutes, or until a cake tester or wooden toothpick inserted into the center of a muffin comes out clean. Cool in the pan on a wire rack for 5-7 minutes.

  • Step 7: Serve warm or invert on to rack to cool completely.

  • Step 8: Top with Orange Marshmallow Sauce.

  • Step 9: Orange Marshmallow Sauce: In the top of a double boiler set over simmering water, melt the marshmallows, stirring, until smooth.

  • Step 10: Remove from the heat, and stir in the orange zest and orange juice. Serve at once.
