  • Protein - 24.3 g
  • Calcium - 434.4 mg
  • Iron - 2.1 mg
  • Vitamin C - 0.2 mg
  • Thiamin - 0.1 mg

Step 1

In a medium sized bowl, mix well all ingredients except for margarine and cheese.

Step 2

Let stand at room temperature for about 5 minutes.

Step 3

Heat margarine in a medium sized non stick skillet until sizzling over medium high heat.

Step 4

Slightly whip eggs again.

Step 5

Pour into hot skillet and stir constantly with spatula until desired firmness is almost reached.

Step 6

If cheese is desired, add at this point.

Step 7

Stir eggs for 2 to 3 minutes or until they are as done as you like.

No special items needed.



The baking powder really does make these fluffy, but mine were a bit too “wet”. I would leave the milk out next time. Really liked the sour cream flavor.

Yummo, I followed this recipe exactly as written, and the eggs were fantastic! Love the added sour cream and although I did not add much cheese I really loved the added flavour it gave to these eggs. Fluffy and light and just so delicious. It doesn't get any easier of tastier than this recipe.
