Step 1: Heat oil in frying pan.
Step 2: Sauté the finely chopped onion, minced bell pepper and the finely diced celery and carrot.
Step 3: Cook until onion is lightly browned.
Step 4: Spray crockpot with cooking spray.
Step 5: Add veggies, beans, oregano, tomatoes and water.
Step 6: Cook on low 8 hours.
Step 7: Season to taste.
